Grandma Emily's Snowball Cookie Recipe
This is a recipe my mother-in-law gave me. She said her
Danish mother, Grandma Emily, and John made these cookies
when John was three years old. His job was to roll the
cookies in the confectioner's sugar. It's a half century
later and this is still ones of his favorites. Grandma
Emily called them Canadian Cookies. We call them Snowballs.
1/2 lb butter
2 cups flour
5 tablespoons confectioner's sugar
1 cup finely ground walnuts
1 tsp water
1/2 tsp vanilla, orange or lemon extract
Preheat oven to 400 degrees.
Cream the butter until like whipped cream. Gradually
work in flour, sugar, and nuts, vanilla and water. Increase
water if necessary to make it hold together. It will be
Roll the dough into 1 inch balls. Arrange the balls 1 1/2
inches apart on the baking sheet. Bake until the cookies
begin to brown around the bottom, about 10 minutes. Roll
in confectioner's sugar while still hot. You can sift
additional powdered sugar on the top for a finished look.
Makes about 4 dozen cookies
