tomato tofu

i pretty much lived off this in one form or another for the
first 5 years of vegan-ness, its super easy, quick and can
be adapted for pretty much anything

2 tbsp olive oil
2 tbsp soy sauce
2 tbsp lemon juice
garlic
oregano
2 tbsp tomato puree

mix all the above, add tofu chunks and button mushrooms
bake at gas mark 5 for 25 minutes

this works with pretty much every vegetable, i usually use
onions mushrooms and peppers, then add in a handful of
spinach towards the end of cooking
its also super tasty with aubergine ^-^

this can be used to make pasta bake by using silken tofu
instead of tofu chunks and mixing in some pre cooked pasta

for pizza bread, miss out the tofu completely and add chunks
of vegan cheese, cherry tomatoes, onions and whatever other
veggies you fancy
smear on french bread and bake for 15-20 minutes
