Milk Shakes and Malts

Never on Sundae???

Basic Recipe

2 scoops vanilla ice cream
1 cup milk
flavoring - See List

Combine all the ingredients in a blender and blend on high
speed for 1 to 1 1/2 minutes, or until the mixture is smooth
and thick. Serve immediately. Recipe should make pint.

Flavorings

* Vanilla - 1 Tbs vanilla extract

* Chocolate - 3 tablespoons chocolate syrup (Recipe below)
and 1 tsp vanilla extract.

* Fruit - 1/2 cup sliced fruit (cherries strawberries,
pineapple, peaches, bananas, , etc.) Fruit must be
completely crushed and pulpy for chunks of fruit when frozen
are like rocks.

* Date - 4 Tbs pitted chopped dates and 4 Tbs chilled date
crystal dessert (Recipe below)

* Maple - 1/4 c Maple syrup, plus ¼ tsp either Cinnamon or
nutmeg

* Raspberry - 1 oz Raspberry Syrup.

* Alexander - 1 oz Crème de Cacoa and 1 oz brandy.

* Root Beer - 1 oz Root Beer extract.

* Hoboken - Chocolate Ice Cream with 1/2 cup pineapple syrup.

* Boston - 1 tsp each, ginger and vanilla extract.

* Catawba - 1 oz. grape syrup or 2 oz. grape juice.

* Hurricane - 1 tsp Butter, 1 oz. Maple Syrup and 1 oz.
Apple Juice. (I dunno. Add an oz. of vodka and batten down
the hatches)!

Variations


* Add 2 Tbs Malt powder to shake to make a Malted Milk. Malt
is rich in Iron.

* Thick shakes depend on the heaviness of the ice cream and
the ratio of ice cream to milk. Experiment with your
favorite brand and adjust ratio until you like it. "Thick"
malts and shakes originated when teenage soda jerks made
them for friends, giving them a discount. The basic recipe
usually is thin, the way a malt and shake is supposed to be.

* Use ice cream the same flavor as the flavoring to be
added; chocolate ice cream with chocolate flavoring.

* Use ice cream to complement flavor as the flavoring to be
added; coffee ice cream with chocolate or Alexander
flavoring, peppermint ice cream with chocolate flavoring.

* Fruit - 1/2 cup sliced fruit (cherries strawberries,
pineapple, peaches, bananas, , etc.) Fruit must be
completely crushed and pulpy for chunks of fruit when frozen
are like rocks.

* Mix ice cream flavors such as vanilla, chocolate and
strawberry with banana flavoring to become the "Banana Split
Shake."

* Raspberry Syrup, banana and cherry is called for some
reason, "The Washington Monument."

* Add raw egg to shake, almost a perfect food although now
raw eggs are risky.

Chocolate Syrup

* 1 1/2 cups sugar
* 1 cup water
* 1/2 cup unsweetened cocoa (preferably Dutch process)
* 1 teaspoon vanilla extract

Stir sugar and water in heavy medium saucepan over
medium-low heat until sugar dissolves. Increase heat and
bring to boil. Place cocoa in small bowl. Gradually whisk in
sugar syrup. Return mixture to same saucepan. Boil 1 minute,
whisking constantly. Pour into bowl. Whisk in vanilla and
cool completely. Cover and chill until cold, at least 1
hour. (Syrup can be made 1 week ahead. Keep refrigerated.)

Date Crystal Dessert

* 1/2 cup Milk
* 1 cup date crystals*

Mix date crystals into milk, set in cool place for at least
2 hours then refrigerate.
