Italian White Bean Soup

I'm feeling pretty good right now. I had a hard time
getting out of bed, but once I did, things progressed
nicely. I had to rush Annie to school, because I stayed in
bed so long, but she got there in time. Kiki got to
daycare just in time to draw on the table with soap
crayons (and then wash it off). Which is one of her
favorite daycare activities. I made it to the gym,
although because my hip is still sore and I'm not feeling
particularly motivated, I didn't work out very hard. I did
my strength training, abs and sat in the sauna, but no
cardio. I've been too scared to step on the scale, but my
clothes are fitting beautifully, so it doesn't appear that
I'm suffering from my lack of motivation, yet. Once I get
over the PMS that's got me dragging (fatigue, sore boobs,
headache) I'll feel better. I also forgot to take my
Celexa the past few nights, so I was dizzy, too. That
didn't help my motivation.

Snookums has been attending a Safety school for LPO's the
past couple of days. I had to work yesterday, but I had
today off, so we met at Subway and had lunch. It was nice
getting to spend an hour with him in the middle the day. I
think I liked that better than all the days off he gets
when the ship's in! I'm kidding. I always like to be with
my Snookums.

After lunch, Gen and I met up at the Starbucks in Poulsbo
for a quick chat and some coffee (or a chai soy latte, in
my case). Since I was up there, I decided to stop in
Central Market to browse their vegetarian section, only to
discover that they remodeled and got rid of the veg
section and integrated it in with all the "regular" foods.
That irritated me a little. That was one of the great
things about Central Market I always loved. The separate
little alternative foods section they had. I used to get a
lot of all natural and organic things there LONG before I
ever considered going vegan. But, I don't live in Poulsbo
anymore and don't go there very often, so I guess I
shouldn't get too upset about it. I was able to find what
I was looking for eventually.

I shocked myself and my family and made a dinner that
knocked their socks off! I decided to make soup tonight,
but instead of making one from scratch (which can take
hours) I decided to cheat a little and buy stock, canned
beans and frozen vegetables. I took some help from Racheal
Ray (from the Food Network), too. I made an Italian white
bean soup. It had:

*no-chicken broth (or regular chicken broth, if you
aren't veg)
*cannellini beans
*navy beans
*spinach
*white potatoes
*tiny sea shell pasta
*a small white onion
*and was garnished with a dusting of vegan
parmesan "cheese"

It was so rich and hardy. It was by far the best soup I've
ever made! Snookums has decimated the pot. All that's left
is a small bowl of it, which will probably be eaten later,
knowing him.

For dessert, I also surprised myself. I made a loaf of
apple butter bread. It may sound impressive, but it
wasn't, really. I unrolled a Pillsbury French bread dough
(from the poppin fresh can), smeared a thin layer of apple
butter on it, sprinkled it with cinnamon and Splenda,
rolled it up, basted it in maple syrup, dusted it with
more cinnamon and baked it as directed. It turned out
sweet and yummy and Snookums has pretty much finished it
off already, too. I won't be making that very often or
he'll be 300 pounds!

So, that's what I did today. I cooked a little. I was
feeling domestic, I guess. I'm tired now, so I suppose
I'll retire to my quarters and prepare for another day.
