Vegan Potato Soup

I feel so good...Need I say more? Well, thats all fine and
good, but it makes for a very boring diary entry, so I
guess I'll elaborate just a touch.

I didn't sleep well last night. I'm not sure why, but I
kept waking up every couples of hours. It could have been
because I had to pee from drinking so much water
yesterday, but whatever the reason, it left me a little
sluggish this morning. I don't have anything pressing on
my mind since Snookums and I decided about the daycare
situation, so it must have been the water.

For breakfast, I made time for a bowl of multi-grain
cheerios and a banana, which made me feel really good
about myself, instead of the donuts I ate yesterday. I did
my usual routine at the gym and was home by noon. Just in
time to catch Starting Over-Relationship Bootcamp. It's
not as good as the regular Starting Over, probably because
it's the same one they showed last summer, but it's better
than Jerry Springer or soaps!

Snookums came home soon after me and we had lunch
together. I made us soy dogs on potato rolls. They tasted
so good. I don't think I've had a hotdog in about 2 years,
but this was so similar, I couldn't really tell the
difference. The texture, color and flavor where all
similar to the real deal.

For dinner, I made a vegan potato soup with sauteed onion,
carrot, baby red potatoes and soy milk. I blended it
smooth with the immersion blender (that I never use),
sprinkled crumbled soy sausage, a dollup of soy sour cream
and some green onion over the top. I also made marble
pumpernickel croutons to dip in it. It turned out so
great! Even Snookums liked it! Well, he liked the soup.
He's still a little apprehensive about the faux meat
products. Last night we had tacos and I used a crumbled
vegan Boca burger in mine. He just couldn't handle the
texture. It's okay, though. This is my thing, not his. I'm
surprised he's been as supportive as he has been. I should
consider myself lucky.

I'm ready to retire now. I think I'll have some
watermelon. I'm gorging myself with it while it's still in
season. I know I won't be getting it much longer. How sad.
